Ingredients:
2 cups all-purpose flour
3 large eggs
1/2 teaspoon salt

1 egg yolk
1/4 cup chopped fresh parsley
Salt and pepper to taste
1 cup marinara sauce
Instructions:
In a medium bowl, mix together the flour and salt. In a separate bowl, whisk together the eggs, water, and olive oil. Gradually add the wet mixture to the dry mixture and mix until a dough forms.
Knead the dough on a lightly floured surface for 5-7 minutes, or until it becomes smooth and elastic. Cover the dough with plastic wrap and let it rest for 30 minutes.
In a small bowl, mix together the ricotta cheese, parmesan cheese, egg yolk, parsley, salt, and pepper.
Roll out the dough into a thin sheet on a lightly floured surface. Cut the dough into 2-inch circles using a biscuit cutter or a drinking glass.
Place a spoonful of the cheese mixture in the centre of each dough circle. Brush the edges of the dough with water and fold the dough over the filling, pressing the edges together to seal. Bring the two ends of the dough together and press to seal, forming a ring shape.
Bring a large pot of salted water to a boil. Carefully add the tortellini to the water and cook for 3-4 minutes, or until they float to the top.
Remove the tortellini from the water with a slotted spoon and place them on a plate. Top with marinara sauce and serve
