Ingredients:
12 lasagna noodles
1 lb ground beef or sausage
1 onion, chopped
2 cloves of garlic, minced
1 can (28 oz) crushed tomatoes
2 cups ricotta cheese
1 cup grated mozzarella cheese
1/4 cup grated Parmesan cheese
2 tbsp chopped fresh parsley
1 egg
Salt and pepper to taste
Optional: additional ingredients such as sliced mushrooms, spinach, or eggplant
Instructions:
Preheat the oven to 375°F (190°C).
Cook the lasagna noodles according to the package instructions until they are al dente. Drain and set aside.
In a large skillet, brown the ground beef or sausage over medium heat, breaking it up with a spoon, until it is no longer pink. Drain any excess fat.
Add the onion and garlic to the skillet and cook until softened, about 5 minutes. Stir in the crushed tomatoes and bring the mixture to a simmer. Season with salt and pepper.
In a separate bowl, mix together the ricotta cheese, 1/2 cup of the mozzarella cheese, 1/4 cup of Parmesan cheese, parsley, egg, salt and pepper.
Spread a thin layer of the meat sauce over the bottom of a 9x13 inch baking dish.
Place 3 lasagna noodles on top of the sauce. Spread 1/3 of the ricotta cheese mixture over the noodles. Top with another 1/3 of the meat sauce, followed by a sprinkle of mozzarella cheese. Repeat the layering two more times, ending with a layer of meat sauce and mozzarella cheese on top.
Cover the baking dish with foil and bake the lasagna for 25 minutes. Then remove the foil and bake for an additional 25 minutes, or until the cheese is golden brown and bubbly.
Let the lasagna rest for 10-15 minutes before cutting and serving.
