What is Gnocchi and how to make it
Gnocchi is a type of Italian dumpling made from potatoes, flour, and egg. They are typically served with a sauce and can also be topped with grated cheese. The word "gnocchi" is derived from the Italian word "nocchio," meaning "knuckle."
To make gnocchi at home, you will need:
1 pound of russet potatoes
1 cup of all-purpose flour (more or less, as needed)
1 egg
Salt
Optional: herbs or cheese for flavouring
Boil the potatoes in a pot of salted water until they are tender. Drain and let them cool slightly.
Peel the potatoes and pass them through a potato ricer or a fine-mesh sieve into a large bowl.
Add the flour, egg, and a pinch of salt to the bowl and mix everything together until a dough forms. If the dough is too dry, you can add a bit more flour. If it's too wet, you can add a bit more flour.
Turn the dough out onto a lightly floured surface and knead it for a minute or two, until it becomes smooth and elastic.
Cut the dough into 4 equal pieces and roll each piece into a rope about 1/2 inch thick. Cut the rope into 1-inch pieces.
If desired, press the tines of a fork into the top of each gnocchi piece to create ridges.
Bring a large pot of salted water to a boil and drop in the gnocchi. They will sink to the bottom, but will rise to the top when they are cooked through.
Use a slotted spoon to transfer the gnocchi to a serving dish. Toss with your desired sauce and serve.
Note: you can also add herbs or cheese to the dough for extra flavor, or roll the gnocchi on a gnocchi board to give them a nice texture
